Pedro Posted April 12, 2022 Author Share Posted April 12, 2022 Mum's codfish and eggs with chips, to me this is mum's comfort food Healthy lunch, broccoli and garlic, cherry tomato and oregano, and fresh cheese Other day's lunch, pork sandwich and crisps Oven cooked codfish and new potatoes Using my home coriander, made some fresh horse mackerel southern Italy inspired spaghetti Coriander grows big here Said coriander used for pea curry with chorizo and poached eggs Expresso and rum with fresh picked mint for dessert Using my garden's fresh big mint leaves for a great zucchini tagliatelle, using DeCecco pasta this was properly tasty. Canned sardines based african style spiced dish, I love this stuff Based cheap green olives and cherry tomatoes, this was for lunch on a rainy cold day and really picked me up for work in the afternoon: Costa loves broccoli Leftover peas with spicy chorizo and fried egg, with fresh tomato salad and toast: A bunch of my fresh coriander turned into dinner Mediterranean / Alentejo lunch, nice black pig's cured ham, cured sheep's cheese, tomato salada and olives Broccoli fusilli, started using dried hot peppers after @boboneleg's comments and now really like it too Fresh herbs from the garden, turning frozen leftovers into a delicious dinner, rosemary and coriander working well to revive two weeks ago codfish and potatoes 3 1 Link to comment Share on other sites More sharing options...

Pedro Posted May 5, 2022 Author Share Posted May 5, 2022 After Buckster's entry, this is never going to be the same, but here it goes anyway: Pennyroyal and oregano seasoned local farmed tomato salad, plus canned horse mackerel with my garden's amazing coriander, sliced onions and the neighbor's lemon's zest, with olive oil. The result is a lot better than the sum of the parts. THE tagliatelle "cacio & pepe", first time I got it properly right. Using a very nice truffle infused pecorino romano made it extra special. Alentejo blood chorizo and tomato rice, wild rice and white rice mix with my garden's fresh coriander. One of the tastiest things I´ve made for myself. Sourdough mix pizza, at Sofia's, from the ride report thread, not exactly round but proper tasty: For @boboneleg, "Queijo da Serra", buttery sheep's cheese from the Serra da Estrela, proper cheese! Squid rice, nothing fancy, oldschool portuguese and really great! It's similar to a mackerel, but narrower and the taste is milder. Fish names are very confusing and regional, so I looked it up and it's latin name is "Scomber scombrus", but then when I look that up it just comes up as mackerel.
