Unless it's a pest that needs culling I wouldn't want to fuck about with the natural order. I've never been impressed with wild meat, you can't ask it to come in for slaughter when it's at its optimum so you never know how good its going to be. Rubber duck anyone?

It's hard to judge eating something only once because it's age, diet, how hard it has to work to get fed, how long it's hung for and the cooking method have a major impact on the flavour and texture. Ostrich steak was the biggest surprise I had, thats a fine tasting meat.

Baby seal is melt in the mouth tender, probably helped by being beaten to death then flash frozen on the ice flow.

Yer I hear the slow death and extended exposure to adrenaline improves the flavour no end.
MooN
Funnily enough, though the french eat a lot of wierd shit still ( snails, frogs, calfs head, foie gras, etc) Horse meat is very very rare these days. I have never been offered it or even seen it on a restaurant menu and only ever once seen a "Boucherie Chevaline" ( butchers specialising in horse meat). But I do like a bit of game, Hare, pheasant, venison, or boar... nomnomnomnom......
